It's come to that time of the year again when we change up our seasonal GREEN Soup at Love and Bones Broth. So this afternoon is was experimenting time!
I like our Spring / Summer GREEN soup to be light and zesty, completely different to our rich and creamy Autumn / Winter GREEN soup.
So I thought I'd share with you a very similar soup to our GREEN soup that will be available to buy from our online shop and our retailers sometime next week.
This is just what I felt like this afternoon, a massive hit of green goodness and man did it hit the spot. This soup is delicious hot or cold and oh so good for you.
Roughly this makes 5L
3 stalks of celery
1 leek - green tops removed
2 cloves garlic
250g loose or 2 bunches of Spinach - washed thoroughly
1 bunch cavil nero
1 bunch of coriander
1 cup of freshly shelled peas - frozen if you can't get fresh
500ml filtered water
salt & pepper
blend - celery, onion, leek and garlic in a food processor till almost mushy
warm your Broth + the 500ml of water, I add a little more salt to taste
In a large pot warm the butter and softly sauté the blended above mixture on a lowish heat, add a little pepper and be careful not to brown it, but make sure all the rawness is cooked off - you'll tell this by the smell
while this is happening prep all your leafy greens - wash and then process all the leaves and stalks in a food processor and set aside - make sure you wash the coriander really well as it can be very gritty
shell you peas and also process till smooth
roll your limes to make them release their juice - now my rule is the juice of 1 lime per litre of GREEN soup
add the warmed Broth to the celery/onion mixture which should now be cooked and bring to the boil
once it has add all your greens including the mushed peas - bring back to the boil for a minute and then turn the heat off
blend the soup once more with a stick blender until its as smooth as its going to get
check seasoning, add the lime, stir and serve
