Barb is back and with her came germs...bad nasty germs from Italy! So we are dosing up big time on Broth and just to mix things up and because a few people I know want my easy Pho recipe here it is!
In a jar so you can take it to work or send it to school with your kids (as I did today).
It is so basic, requires only the cooking of noodles and warming of broth and simply shove everything into a jar when you're ready to eat pour hot broth from a thermos or warmed from the stove over your jar full of yummy and you have a nutritious delicious lunch or dinner!
The ingredients below will roughly make 4 Jars or 4 bowls of Pho
*Note; there wasn't any mint when I was photographing the Pho this morning before I left for work but Max picked some up and added it to the Jar before Jemima headed out to work.
1 piece of eye fillet - frozen
1 cucumber - finely sliced
1 packet of bean shouts
1 lime - quartered
large handful each of coriander and mint
1 large red mild chilli - finely sliced
4 leaves of kale - finely shredded
2 spring onions finely sliced
a knob of ginger - grated finely
1/2 teaspoon of fish sauce
1 good pinch of cinnamon
a splash of olive oil
rice or udon noodles - cooked per instructions on the packet
Dead easy! If your making 4 divide between each jar or bowls
In your clean Love and Bones Broth Jar add the following to the bottom of the jar;
a dash of fish sauce
a pinch of ground cinnamon
as much or as little chilli as you like
1/4 teaspoon of grated ginger
a wedge of lime squeezed of its juice into the jar and left (see my picture)
then in goes the kale
followed by your cooked and cooled noodles - I put a little olive oil to stop the noodles from clumping together
then the rest; cucumber, spring onions and bean shouts
now get your frozen fillet steak and shave very carefully thin slices off it - you may need to let it defrost a little before you begin - the slices need to be very thin so they cook once the hot broth hits the meat.
put a few slices on top of all your other ingredients and warm your broth and either keep it warm in a thermos until you want to eat your soup or pour over each bowl or Jar and serve!
remember if you're taking your Jar to work keep it in a luch bag with freezer blocks to keep it cold until lunch time.
