Cream of Spinach Soup
I'm not sure why but for the past week my bodies been craving Spinach - I'll have it any which way it comes, I just need tonnes of the stuff.
Maybe it's because we just concured another mammoth house move, there were a few major hiccups in the kitchen and I'm rest deprived, but however it happened I got sick.
To be completely honest I look after everyone first and then me last, so this week I decided to perch myself on the top of the ladder and get myself well - how would they all cope if mummy did gone down in a big way?!
I got up very bright and early on Wednesday morning for my weekly trip to the wholesale organic produce markets and they had an abundance of the most perfectly fresh bunches of spinach, so I took 4!
That evening after my usaul massive day in the kitchen, feeling on the verge of being bedridden from shear exhaustion I made myself this soup.
5L of it to be exact and drank it all over the next few days.
Cream of 'Spinaci' Soup (but you need to pronounce it with a thick italian accent because I'm surrounded by them at work and play, and secretly wish I was one)
4 bunches of organic Spinach washed about 4 times to rid it of any grit, sand or stones - chopped roughly
a handful of shallots, finely chopped or failing being able to buy those, a large onion or large leek will also do - finely chopped
4 cloves of garlic, finely chopped
1 (200ml) tub of whole organic cream
Salt & pepper
Pinch of chilli (optional)
Melt the butter
sautee onion / shallot & garlic till slightly caramelised
add the broth and bring it all to a boil
then straight away add the washed, spun and roughly chopped spinach, add more as it wilts down
bring to a simmer for a few minutes
then add the tub of cream and whizz with a hand held blender stick
season with salt and pepper and I added a pinch of chilli to mine as well
serve just as is and trying stopping at just one bowl or mug - Impossible!
