When my other half comes home from long stints or short stints away in a different country for work, he craves sunlight & nourishment on his return.
This last trip he got lucky and I made him this. We have aptly named it jet lag soup, because in my opinion its the perfect balance of everything to get your immune system pumping and back to your good old self in no time!
Max always asks me for lots of greens and broth when he gets home, I may not be good at other things but I can whip him up something yummy in next to no time and it always hits the spot.
The most time consuming part of this soup is chopping everything up which takes no more than 10 mins, then 10 mins cooking and you're eating dinner or lunch or even breakfast, if your heart desires in no time.
JET LAG BROTH
I have all these ingredients in my fridge most weeks unless they are out of season.
2 brussel sprouts, finely sliced
4-6 snow peas, finely sliced
3 or 4 broccoli florets, cut into mini florets
the white part of a leek, finely sliced
a large handful of spinach - washed really well
2 spring onions, finely sliced on an angle
a 5cm knob of ginger, grated
a little coriander for garnish and flavour at the end
toasted seasme seeds - I always have these in my fridge for salads and to sprinkle on rice
seasoning; a slosh of fermented soy sauce, a dash of fish sauce, a tiny sprinkle of chilli and the juice of half a lime or serve your broth with a small wedge of lime for each person to squeeze in themselves.
wild salmon - skin removed and diced
organic udon noodles (optional) - you can use gluten free versions of the same kind of noodles
Warm your broth
add leek & ginger
followed by seasoning; soy, fish sauce etc...
cook for around 4 to 5 minutes
then add everything else except for the spring onions, corriander and sesame seeds
cook for another few mins
serve in bowls with spring onions, coriander, sesame seeds, lime wedge and always a drizzle of olive oil
if adding noodles - cook per instructions and divide into each bowl before pouring soup in
This fishy vegetable dose of goodness is the stuff that will make you concur the shit feeling after flying, but strangely I love that feeling - I think I don't get away enough!
