It's winter. It's freezing cold. And all I want is soup!
Every couple of months I crave soup like this, thick, flavourful and creamy and everyone usually has one in their repertoire of recipes - yes? Well try this one. It was good, really good!
There's always a draw of things in my fridge screaming to be used to avoid ending up in the bin.
I've been watching the war on waste thanks to my 8 years old quest to save the planet. No plastic allowed whatsoever, what can and can't be recycled and FOOD! Which brings me to that draw...either chuck it or make it into something yummy - so I picked yummy.
SHOP IT or FRIDGE IT;
the bottom of a leek (white bit)
the heart of celery or the bits in the fridge yet to be used
a couple of garlic cloves
some old herbs that were on their last legs sage & rosemary - a sprig and whatever leaves I could salvage from the sage
100g roughly of butter
half a head of cauliflower - mine was leftover from Mickey's gift a few weeks back
a carrot or two - skin off and diced
half a large sweet potato - skin off and diced
a wedge of pumpkin - skin removed and diced
Spices - a decent pinch of each of these, garam masala, cardamom, cumin, cinnamon, black pepper, a smaller pinch of chilli and a teaspoon of sweet paprika
2L Love and Bones Broth - either plain flavour works well, I used Chicken
Salt to taste at the end
1 tub of organic cream - roughly 200ml (can be substituted for coconut cream)
Melt the butter in your pot
fry off onion, leek, garlic until golden and caramelised
add spices and toast a little
now add the cauliflower and celery - cook for 5 mins or so
followed by all the other veg (pumpkin, sweet potato, carrot)- cook until everything smells toasty, sweet and delicious
now add the Broth and herbs (if you have them) and bring it to a low simmer
cook until the carrot and other root veg is soft - about 45 mins - 1 hour on a slow bubble
once its cooked add cream and blend with a stick blender until creamy and thick
serve with crusty bread and inch thick butter or bacon crumbs & chives or just as is with a little olive oil
Great for freezing for go to in a minute meals or be like me and eat the entire batch!
